Red Rainbow Raw Pad Thai

Yields1 Serving
 2 large julienned carrots
 1 red pepper, thinly sliced
 1 cup of red cabbage
 1 medium sized zucchini, julienned
 3 green onions
 1 tsp sesame seeds
 1 tbsps hemp seeds
 1 garlic clove
 2 tbsps fresh lime juice
 2 tbsps tamari
 1/4 cup of almond butter
 2 tbsps water
 1/2 tbsps toasted sesame oil
 1 1/2 tsps of raw honey
 1 tsp of freshly grated ginger

1. Prepare the vegetables and add the zucchini, peppers, carrots and the cabbage into one or two large bowls. Toss with your hands to combine the mixture.

2. Prepare the dressing by taking all of the dressing ingredients and processing in a mini processor. The dressing may seem thin at first but will thicken as it sits.

3. Top the vegetables with the green onions, hemp and sesame seeds. Pour the dressing on and enjoy!

  1. This is really delicious. I get very bored of salads and bland vegetables with no sauces since I have had to stop all animal protein for an anti-cancer protocol. And I can’t have a lot of vegan recipes because they are too high in carbs, which is very unwise as they convert to sugar and feed cancer. So it’s quite hard to ring the changes. but this is really flavourful, and I just reduced the amount of honey because of the sugars. A nice way to use spiralized courgette too.
