 2 tbsp Olive oil
 1 Onionfinely chopped
 400 g Asparagustrimmed
 500 ml Vegetable Stock
 Microgreens for garnish
 Freshly ground black peppar

Heat the oil in a large saucepan and sauté the onion over a medium for 3-5 minutes.

Chop each asparagus spear into 3 and add to the pan with the onion sautéing for 2-3 minutes. Add the stock and simmer for 12-15 minutes.

Turn off the heat and allow to cool slightly before blending the soup with a hand blender until smooth

Return the soup to a saucepan and place back on a medium heat to warm through.

Serve with a sprinkling of microgreens of your choice and a twist or two of freshly ground black pepper.
