Carrot Pasta with a Creamy Zesty Garlic Sauce

This is an easy to prepare salad dish that is full of vitamins and minerals as the vegetables have been prepared in their raw state for optimal nutritional uptake.

 1 big carrot, spiralized into noodles
 1 tbsp of unhulled tahini
 1 tbsp of walnut oil
 3 tbsps of fresh lemon juice
 1 tsp of tamari
 1 tsp of grated ginger
 1 small garlic clove, grated
 A handful of parsley, to top
 A handful of pine nuts
 A handful of sesame seeds

1. Mix all of the ingredients for the sauce, combining them well in a food processor.

2. Cut the carrot in noodle shapes (using a vegetable spiralizer makes this easy)

3. Pour the sauce over the carrots and then gently mix them by hand to coat thoroughly.

4. Add the parsley, sesame seeds and the pine nuts on top before serving.
