Delicious Chilled Vegetable Soup

This is the perfect summer soup to enjoy when the weather gets warm. It is raw, creamy, and full of nutrients to rejuvenate you at the midday. As with any vegetable recipe, feel free to choose from our list of high nutrient to achieve your desired flavor combination.

Trying different varieties of vegetables with this recipe is a great way to blend new flavors and try something new each time. Another vary the flavor of this soup is to experiment with different garnishes such as fresh chopped herbs, cheeses from goat and sheep’s milk, freshly diced tomatoes or red onions, etc. The possibilities for flavor and nutrients are endless in this wonderful easy to make soup.

 Medium-sized bunch Asparagus, ends trimmed
 1 medium-sized Leek, washed and sliced
 1/2 small Cucumber, sliced
 1/2 small Courgette (Zucchini), sliced
 1/2 large Red Pepper, sliced
 1 medium Tin (Can) of Tomatoes + Juice
 Water
 Bragg’s amino acids, tamari, or soy sauce (optional)
 Small amount of raw Feta cheese from sheep’s milk (optional)
 Freshly chopped tomatoes (optional)

1. To make your fresh creamy summer soup, combine in a large bowl the desired amount of vegetables.

2. Once all the vegetables are in the bowl it is time to add your liquid. Use one medium tin (can) of tomatoes with juice and a small amount of filtered water. You can always add more liquid later on to achieve your desired consistency. For seasoning use a handful of fresh chopped basil and a clove or two of pressed garlic.

3. Use a hand-held blender or any other blender or food processor you have a home and blend the contents of the bowl until smooth. The hand-held blender used in this video can be found at any local supermarket for a reasonable price. You do not have to you an expensive food processor to make this delicious soup.

4. Add a full avocado sliced into the mixture to create a great creamy addition to your soup. At this point you can add more water depending on how you like your soup (thick or thin?).

5. For extra flavor add a dash of olive oil or garlic oil plus fresh ground sea salt and black pepper to taste. You can also add optional Bragg’s amino acids, tamari, or soy sauce if you would like to have that flavor as well.

6. Garnish for extra taste and variation. We suggest a small amount of Feta cheese (from sheep’s milk) and fresh chopped tomatoes.

7. Serve raw, cold, and delicious or slightly warmed. Be very careful to only simmer the soup as boiling the soup will diminish the nutrient content. Enjoy for the perfect summer day with leftover for Monday’s office lunch.
