Grilled Whole Fish with Chilli Soy Dipping Sauce

 1 whole fish
 A handful of fresh herbs
 2 lemons (or 1 orange)
 3 inches of fresh ginger
 2 tbsps olive oil
 2 1/2 cloves of garlic
 3/4 pepper
 1/2 cup soy sauce
 Sea salt and pepper
 Additional olive oil for brushing

1. Preheat the grill and clean the fish from the inside out, patting dry carefully. On each side of the fish, cut 3-4 vertical slashes to the bone. Brush with oil on the inside and outside of the fish. Season with salt and pepper.

2. Stuff the fish with fresh herbs, citrus and ginger slices, tucking them into the slashes. Place the fish into a grill basket and close the basket. Under direct heat, grill for 6-8 minutes until the fish is done and flakes easily at the thickest part of the fish.

3. For the dipping sauce, take a small saucepan over a medium high heat and add the cooking oil. When hot, add the peppers, garlic and the chilli peppers. Cook for 30 seconds and then add the soy sauce, before cooking for another 15 seconds.

4. Serve the sauce with the lemon or lime wedges around the fish and a large salad. Enjoy!
