Creamy and delicious red lentil curry made in an instant pot. This is an easy and filling healthy dinner that will satisfy your tastebuds.

Instant Pot Red Curry Lentils

Into The Instant Pot:
 1.50 Brown Lentils
 0.50 Large onion, diced
 2 tbsp Red Curry Paste
 1 tbsp Erythritol or Monk Fruit Sweetener
 1 tsp Garam Masala
 1 tsp Curry Powder
 0.50 tsp Turmeric
 2 Garlic cloves, minced
 1 inch knob of Ginger, minced
 A few good shakes of Cayenne Pepper
 2 Water
 1 can Tomato Sauce
 1 tsp Coarse Sea Salt (more to taste)
And then:
 0.75 cup Coconut Milk
 2 tbsp Butter or Ghee (Optional)
 Cilantro, for garnishing
 Rice, for serving

Place all ingredients in the Instant Pot. Cook on high pressure for 15 minutes. Natural pressure release (meaning just let it sit) for 10 more minutes.

Stir in the coconut milk and butter. Taste and adjust seasonings. Can also be served with quinoa. Top with cilantro, and be amazed at the yumminess of the humble little lentil.
