1. Preheat the oven to 350f/175c.
2. Use coconut oil for coating the muffin tins (or paper muffin cups, add 1/2 tsp melted coconut oil to batter)
3. Mix all of the ingredients together and pour evenly into tins.
4. Place on the middle rack of the oven and bake for 25 minutes.
5. After taking out of the oven, sprinkle almonds on the top.
