Quinoa & Veggies

Perfect and extremely healthy alternative to pasta, rice, or any other carbohydrate you like to eat. While you cook and eat quinoa (Keen-Wah) as a grain, it is actually a seed full of supernutrients.

In order to cook Quinoa you want to use half the amount of quinoa to twice the amount of water. For example, to cook 1 cup of quinoa you will need to use two cups of water. Quinoa really is the most versatile food. You can serve it warm as a main dish or eat it chilled with a salad. This particular recipe keeps wonderfully to have for lunch the next day.

 1 cup quinoa
 2 cups water
 Small amount of chopped red onion, chopped red pepper, and courgette (zucchini)
 Fresh green peas
 Mushrooms
 Fresh herbs

1. Bring 1 cup quinoa and 2 cups water to a boil in a pan. Once you achieve a boil, reduce the heat to a simmer and simmer with the pan covered for about 10 minutes until all the liquid is absorbed.

2. Meanwhile, in a frying pan add a small amount of olive oil, add a small amount of chopped red onion, chopped red pepper, and courgette (zucchini). Cook your vegetables nice and gently for amount 5 minutes until they are nice and soft.

3. When both your pans are ready you can put both the contents into a large bowl. If you would like to have the quinoa as a main dish you can serve the quinoa and cooked vegetables topped with additional fresh vegetables and herbs such as fresh garden peas and mushrooms with any fresh herbs you like.
