1. Peel the beets and sweet potatoes. Use a spiralizer to cut the veggies into long curly strips and then use a pair of kitchen scissors to cut the pieces further into more manageable strips.
2. Mix the sweet potato and the beetroot ribbons together in a large bowl. Cut the scallion tops at an angle so they form long rings, then sprinkle the salad with the scallions and pumpkin seeds. Serve with your favourite type of vinaigrette.
