1. Preheat the oven to 450F/230C. Peel the carrots if desired. Trim the tops to 1 inch.
2. Toss the carrots in with the oil, salt and the pepper. Place onto a 17 x 12″ baking tray.
3. Bake for 20 minutes. Stir once. Reduce the heat to 325F/160C and bake, stirring occasionally for 15 minutes until the carrots are brown and tender.
