Tomato Squash Dish

Yields1 Serving

 1 finely diced onion
 1 green bell pepper
 1 crushed garlic clove
 1/2 cup grated carrots
 2 yellow squash
 2 zucchini/courgette
 4 chopped tomatoes
 2 tbsps olive oil
 Sea salt
 Black pepper

1. Into a hot skillet with oil place the onion, green bell pepper, garlic and carrots. Cook until the onions are transparent.

2. Add in the squash, zucchini and the tomatoes and stir. Leave the vegetables to cook, stirring occasionally until all softened.

3. Add salt and pepper to season the vegetables to taste. Great served with steamed fish.
