Vegetable Paella

Yields1 Serving

Here is a recipe for a fun Spanish Dish made with fresh vegetables and quinoa instead of rice. It is easy to prepare and packed with delicious flavour. In order to best cook this dish you will want a big pot preferably a wok pan or a paella pan to cook all your vegetables and quinoa together.

Traditionally a paella is made with vegetables, mixed seafood, and rice. This recipe is vegetarian and a really healthy alternative to traditional paella. If you would like to make it with a combination of seafood, simply follow this recipe and add in your fish and shellfish for proper cook time.

 Red Pepper
 Zucchini (Courgette)
 Oyster and Brown Chestnut Mushrooms
 Chopped Tomatoes
 Garden Peas
 Olive Oil
 Paella spices
 Sea salt
 Garlic Oil

1. In a wok or paella pan, add onion, asparagus, red pepper, and courgette (zucchini) in frying olive oil to cook for 3 minutes .

2. Add oyster and brown chestnut mushrooms to the cooking vegetables as well as regular chopped tomatoes and garden peas (frozen and defrosted). Leave and cook for 2 minutes.

3. Next move vegetables to the outside edge of the pan in order to cook your quinoa (rice substitute).

4. Add olive oil & quinoa in the middle of the pan. Double the amount of water for the amount of quinoa and pour water to cook straight in the pan.

5. Stir the mixture together and add your paella spices with traditional paprika. Heat to boil. Reduce heat and cook for 10 minutes.

6. Stir together until the quinoa has fully absorbed the liquid. Season with sea salt and garlic olive oil and leave to absorb for another 2 minutes. If you want to use seafood in this recipe, that can make for a really healthy dish as well.

7. Simply add your choice of seafood into a paella recipe and substitute quinoa for the rice in the other recipes you find.
