
 1¼ cup of Really Healthy Buckwheat Flour
 1 cup water
 ¼ cup chia seeds
 ¼ cup of light olive oil 
 salt and Pepper to taste
 2 dessertspoons of apple cider vinegar 
 1 level teaspoon of bicarbonate of soda

Add some of the water to the ¼ cup of chia seeds and allow to soak for 30 minutes

In a large bowl add the flour, chia seeds, remaining water, olive oil, salt and pepper, and mix well

Add cider vinegar and bicarbonate of soda, mix again

This should make a smooth batter, as opposed to a dough

Pour the mixture into a small loaf tin, tapping the bottom of loaf tin on counter to release any air bubbles

Put into a preheated oven at 180°C for approx. 20-30 minutes
