Hot Quinoa ‘Cereal’ with Apple

 2 cups diced apple
 1/4 cup water
 1/2 teaspoon ground cinnamon
 1/8 teaspoon ground nutmeg
 Dash of ground cloves
 1 cup water
 1 cup coconut milk
 2/3 cup quinoa flakes
 1/8 teaspoon sea salt
 3 tablespoons raw honey
 1 teaspoon vanilla extract

1. Combine apple and 1/4 cup water in a small skillet; bring to a boil.

2. Stir in cinnamon, nutmeg, and cloves; cover, reduce heat, and simmer for 4 minutes or just until crisp-tender. Remove from heat; uncover and let stand.

3. Bring 1 cup of water and 1 cup of water to a boil in a large saucepan over a high heat; stir in the quinoa flakes and sea salt.

4. Cook for 3 minutes, stirring frequently. Remove from heat and let stand until slightly thickened.

5. While the quinoa stands, return the apple mixture to a medium heat; add the raw honey and vanilla, stirring well. Serve apple mixture over cereal.
