One of the most popular Indian breakfast item – Upma can be prepared using cooked quinoa in combination with all the healthy vegetables.

1 cup of Cooked Quinoa
1/2 cup of Green Peas
1/2 cup of Diced carrots
1/2 cup of Diced Tomatoes
1/2 cup of Chopped Onions
2 Chopped Green Chilies
A pinch of Turmeric powder
Salt, to taste
A few Cilantro / Coriander for garnishing
1 tbsp of coconut oil
1/2 tsp of Mustard
1 Red chili
1 tbsp of Groundnut
1 tsp of Bengal gram dal
1 tsp of Black gram dal
A few Curry leaves

1. Heat oil in a heavy bottomed pan; add mustard, whole red chili and let the mustard flutter and simmer.

2. Add groundnut, Bengal gram dal, black gram dal and fry until light golden brown in color. Add in the curry leaves, onions and salt. Sauté until the onions become translucent.

3. Stir in the green chilies, carrots and peas and then sauté for a few minutes.

4. Finally add the cooked quinoa, cover the pan and simmer for about 5 minutes.

5. Remove from the heat, garnish with coriander leaves and serve hot.
