Celeriac Fries

Fries - but Healthy! Mix up your sides with this versatile root.

 1 Celeriac Root
 2 Tbsp. Coconut Oil
 Seasoning, e.g. Cajun, Cayenne Pepper
 Salt and Pepper to Taste
 2 Tbsp. Lemon juice

Pre-heat the oven to 200 °C

Cut the bottom of the celeriac off (the roots) and then peel off the skin.

After, cut it into slices roughly 2 cm wide to resemble fries.

Soak the fries in a bowl of water and lemon for 20 minutes to prepare for baking.

5. Afterwards, drain, dry and toss the fries with coconut oil and season to preference.

Line a baking tray with non-stick baking paper and place the fries evenly apart and bake for 30 minutes.

Once 30 minutes is over, turn off the oven and let the fries sit for another 10 minutes.

Remove from the oven and portion the fries out.
