
1 cup of quinoa
2 cups of vegetable broth
2 avocados
2 tbsps lemon juice
1 diced tomato
1/2 a diced cucumber
2 stalks of diced celery

1. Cook the quinoa according to the pack’s instructions. Use the vegetable broth in place of the water. Leave to cool.

2. Once the avocados have been cut in half, remove both the pit and the peel.

3. Cut the avocados into chunks and toss in with lemon juice. Add in the remaining ingredients and the avocado into the quinoa. Toss gently and mix in.

4. Chill the avocado quinoa salad mixture until it’s ready to serve. Enjoy!
