Apple Salsa Salad

Yields1 Serving
 1 tsp raw honey
 2 tbs olive oil
 1/4 cup lime juice
 4 finely chopped green onions
 1 minced clove of garlic
 2 red skinned apples (julienned)
 1 small jalapeno, chopped, seeded and finely minced
 2 cups lambs lettuce
 1/4 cup chopped cilantro
 1/2 cup of cooked quinoa (Optional)
 Home-made vegetable crisps (Optional)

1. Whisk together the raw honey and lime juice together into a large salad bowl. Whisk the olive oil in and stir in the jalapeno, green onions and garlic. Fold the apples and cilantro in, seasoning with salt and pepper if desired. Leave to stand for 10 minutes.

2. Fold the lambs lettuce bouquets into the apple mixture, ensuring that the leaves are fully coated with the lime juice mixture. Divide amongst the serving plates and top with some quinoa or vegetable crisps.
