Avocado and Chicken Lettuce Wraps

This avocado and chicken salad wraps are a highly nutritious, refreshing and a lovely addition for lunch. Avocados are a powerhouse of nutrients including vitamin C, E, K, B6 and B12.

Yields1 Serving
 2 avocados
 2 cooked organic, none grain fed chicken breasts
 3 diced tomatoes
 Half a diced jalapeno
 2 tablespoons of diced yellow onion
 3 cloves fresh minced garlic
 1/4 cup fresh chopped cilantro
 2 teaspoons fresh lime juice
 6-8 large romaine lettuce leaves

1. Mash the avocado into a medium sized bowl.

2. Shred the cooked chicken breast

3. Add the remaining ingredients and stir until mixed.

4. Spread 2-3 tablespoons of this mixture onto the romaine lettuce leaves and wrap.

  1. Had these for lunch: super, super tasty! I could only manage 2 of them, the wife had the same….
    Don’t mean to be picky but avocados don’t contain B12 (!)..perhaps it is a typo..does not detract from the recipe though! By the way, you can add any fresh herbs you fancy, not just coriander (cilantro). We had some nice English parsley!
