4. Chop the strawberries and remove any stems and hulls. Into a saucepan add the strawberries, arrowroot powder, lemon juice, maple syrup and vanilla extract together.
5. Over a medium-low heat, heat the strawberry mixture, watching over it and stirring frequently. The arrowroot powder will thicken eventually and create a glaze or a thin jam. Once this consistency has been reached, remove from the heat.
6. Pour the strawberry mixture into the pie pan and then top with the rest of the diced strawberries. Keep in the refrigerator before serving.
