Quinoa Cabbage Salad

Yields1 Serving
 1/2 cup quinoa
 1 cup of water
 2 cups of cabbage
 1/2 cup carrots
 1 cup of green onion
 1/2 cup zucchini/courgette
 3 tablespoons of soy sauce/coconut aminos
 3 tablespoons of rice wine
 Vinegar
 2 teaspoons of sesame oil

1. Into a medium sized pot, add the quinoa and the water. Boil and then reduce to cover. Leave to cook for 10-15 minutes until all the water has been absorbed.

2. Into a pan, heat the oil. Place in the green onions, zucchini and the carrots, sauteing until the vegetables are tender. Add in the cabbage and saute, allowing the cabbage to be thoroughly cooked and slightly wilted. Once this is prepared, stir in the rice wine vinegar and soy sauce. Continue cooking this until the liquid is gone which can take about 1-2 minutes.

3. Stir the vegetables and the quinoa together, before serving.
