Quinoa Porridge with Blueberries and Pecans

 1/2 cup of quinoa
 1/4 tsp vanilla extract
 1 1/2 cups of coconut milk
 1 dash of cinnamon
 1 tablespoon of raw honey or coconut blossom nectar
 1 tablespoon of toasted pecans
 1/4 cup of blueberries

1. Place the quinoa, coconut milk, raw honey/coconut blossom nectar and cinnamon into a pan and bring to the boil. Reduce the heat and simmer for 15 minutes, uncovered until its tender.

2. Add in the blueberries to the mixture and more coconut milk to taste, then top with pecans. Ladle into a bowl and enjoy!
