Yields1 Serving 2 cups of cooked quinoa
1 finely chopped red onion
1/2 a finely chopped Bell Pepper / Capsicum (green or any color)
Cabbage – handful, finely chopped
1 Carrot – finely chopped
Mushrooms – a handful, finely chopped
1/2 a Tomato – finely chopped
1/2 tsp of Garlic – finely chopped
1/2 tsp of Ginger – finely chopped
1 tbsp of Olive oil
Sea Salt – to taste
1/2 tsp of Black pepper powder
A few drops of lime juice
Other vegetables such as spring onion, cauliflower and broccoli can also be added.
11. Heat the olive oil in a pan, add the finely chopped garlic and onions, sauté until the onion turns light golden brown in colour.
32. Then, add all the vegetables and sauté on high flame continuously for 2-3 minutes until the vegetables become a little crisper.
53. Add the sea salt as needed, pepper powder and a few drops of lemon juice to taste.
74. Then add the cooked quinoa to it and mix well. The delicious quinoa salad is ready!
