Roasted Garlic Cauliflower Mash

Kiss goodbye to those starchy, carb-filled potatoes with this new garlicy mash goodness in town!

 1 Head Cauliflower Cut into Florets
 ¼ Cup Almond Milk
 Olive Oil
 1 ½ Tsp Rosemary
 1 ½ Tsp Thyme
 3-4 Roasted Garlic Cloves
 Salt and Black Pepper to Taste

Preheat the oven to 400 degrees.

Place 4 garlic cloves on parchment paper and drizzle 1 tablespoon olive oil and a pinch of salt. Wrap tightly in the paper and bake until the cloves are soft.

Bring a large pan of water to the boil and add the cauliflower for 10-12 minutes or until cooked.

Drain the water and place the cauliflower on a towel and let cool for 10 minutes and then dry completely before proceeding.

In a food processor combine the cauliflower, almond milk, 3 tablespoons olive oil, rosemary, thyme, the roasted garlic cloves which should be roasted by now, ¾ - 1 teaspoon salt and a pinch of black pepper.

Blend and puree for 2-3 minutes or until the mashed cauliflower is completely smooth. Be sure to scrape down the sides of the bowl every 30-45 seconds to ensure even pureeing.

Serve mashed cauliflower with a few sprigs of rosemary or thyme and enjoy.

Roasted Garlic Cauliflower Mash

  1. Luke warm /cold when it gets to the table! Needs to be creamed immediately while warm. Try using a dollop of bio natural yogurt in place of commercial almond milk, which tends to have a lot of additives.
