Salmon Patties

Yields1 Serving
 3 cans of wild caught Alaskan salmon
 3 eggs
 4 chopped spring onions
 3 tbsps of fresh squeezed lemon juice
 1 tbsp of dried dill
 1/2 tsp of ground ginger
 Sea salt
 Black pepper
 Garlic seasoning (optional)
 Coconut oil

1. Drain the canned salmon and place into a mixing bowl.

2. Add in the spring onions, eggs, spices and the lemon juice, stirring to mix well.

3. Into a large pan heat the coconut oil over a medium to high heat (there should be enough to cover the pan).

4. Start to form the salmon mixture into the patty shapes and then gently fry in the oil. They should be fried for 3 minutes on each side and then placed onto a piece of kitchen towel and left to drain.

5. Serve the patties with a wedge of lemon and the vegetables of your choice (kale, spinach, broccoli, purple cabbage or courgettes are all good choices). Enjoy!
