Spinach Salad

This tasty side salad serves two people and takes only 15 minutes to create.

Yields1 Serving
 1 bunch of fresh spinach
 2 tbs olive oil
 4 green onions, chopped
 Freshly ground black pepper
 Juice of 1 lemon
 Your choice of fresh vegetables (tomatoes, cucumber, avocado, sun-dried tomatoes, pepper, etc)
 A handful of chopped nuts (walnuts, almonds, pecans, etc)

1. Wash the spinach, drain and chop.

2. Allow the leaves to sit for a few minutes before squeezing out any of the excess water.

3. Place the spinach in a medium bowl and add your chosen vegetables, green onions, a handful of chopped nuts, a drizzle of lemon juice, plus the olive oil and a dash of pepper.

4. Toss and serve.
