1. Prepare the sweet potatoes by washing and baking them in foil at 375F until they are soft, which takes around 50 minutes. Leave them to cool.
2. While these are cooling, peel and slice the apples, placing them in a bit of cashew butter in a shallow pan.
3. Cook the apples on a low to medium heat, until they are soft. Add the spice mix, and cook for several minutes or longer until caramelized.
4. While the apples are cooking, prepare the topping by blending the spices, and the almond flour into a medium sized bowl.
5. Use two knives or a pastry cutter and cut in the nut butter. Do not overly mix the butter, just blend until the mixture resembles dried oatmeal.
6. Peel and slice your sweet potatoes into medium thick slices. Place half in a layer at the bottom of the 9 x 13 baking dish or a large 2 1/2 quart deep casserole dish.
7. Layer the apples next and then top with the rest of the sweet potato.
8. Sprinkle the topping over the sweet potatoes and then place whole pecans on half or the whole of the recipe.
9. Bake in the oven at 375F/190C uncovered until the casserole becomes bubbly and the topping is crisp, which should take about 45 minutes.
Serve straight away and enjoy!
