Sweet Potato Quinoa Cakes

Yields1 Serving
 1 sweet potato, peeled and chopped
 1/2 diced red onion
 1/2 tsp sea salt
 1/2 tsp pepper
 2 minced garlic cloves
 1/2 cup cooked quinoa
 2 tbsps chopped fresh cilantro/coriander
 1/4 cup crumbled goats cheese
 1 large egg (lightly beaten)
 1 lime
 Sea salt
 Black pepper

1. In a large skillet heat 1/2 tablespoons of olive oil. Add in the red onion, sweet potato and the 1/4 teaspoon of salt and pepper. Stir and then cover and cook for 10-12 minutes until the potato becomes soft. Remove the lid and then add in the garlic, cooking for another 30 seconds.

2. Transfer the sweet potato mixture into a large bowl and mash lightly, add in the quinoa, goats cheese, the rest of the sea salt and the pepper, mixing it in well. Once all of this is combined, add in the egg until the mixture is completely moist.

3. Using your hands, bring the mixture together and form into four patties of equal size. Heat the same skillet and add in the olive oil. Add the cakes and allow to cook for 3-4 minutes each side until they become a golden brown colour.

4. Serve with a green salad!
