Vegan Spinach Balls

Yields1 Serving
 3 ounces of fresh spinach
 1 cup of raw almonds
 1/2 cup of raw cashews
 3 tablespoons olive oil
 1 chia or flax egg
 salt & pepper
 1 small red onion
 1/2 cup of raw sprouted oats

1. Preheat the oven to 350F/175C and then line a cooking sheet with some parchment paper.

2. Place all of the ingredients into a food processor and pulse until the nuts are ground up slightly. (Prepare Flax or Chia eggs by mixing 1 tablespoon ground Chia or Flax Seeds with 3 tablespoons of water. Allow to sit for 15 minutes until a thick gel forms. This is your egg replacement!)

3. Scoop tablespoon sized balls of the spinach mixture out of the food processor and place onto a cookie sheet.

4. Place in the oven to bake for 15-20 minutes until the spinach balls are browned slightly.

5. Remove from the oven and allow to cool for a minute on a cookie rack before serving warm.
