Avocado and poached egg on toast is a delicious and nutritious breakfast option. Not only is it a tasty way to start your day, but the avocado provides healthy fats and the egg is a great source of protein. The creamy avocado pairs perfectly with the runny yolk of the poached egg, creating a mouthwatering combination. Toasted bread completes the dish, adding a satisfying crunch to each bite.
 1 Slice of Sourdough Bread
 1 Avocado
 1 Egg
 1 pinch Chilli Flakes
 1 tsp Olive Oil
 1 tbsp Vegemite/Marmite

Toast the bread then drizzle with a little olive oil

Spread a thin layer of Vegemite\marmite

Scoop the avocado out of skin and remove the stone

Mash the flesh with a fork and add a dash of olive oil and chilli flakes to taste

Spread the avocado on the toast

Bring a pot of water to a gentle boil, then add a pinch of salt to the water. Meanwhile, crack an egg into a small cup or bowl. With a spoon, begin stirring the boiling water in a large, circular motion, then when the water is swirling, add the egg(s). Cook the egg for about 2 1/2 to 3 minutes

Scoop your egg from the pan and add to your toast

TIP:
If poaching an egg is a problem for you, a lightly fried egg will work just as well
