Avocado and poached egg on toast is a delicious and nutritious breakfast option. Toast the bread then drizzle with a little olive oil
Spread a thin layer of Vegemite\marmite
Scoop the avocado out of skin and remove the stone
Mash the flesh with a fork and add a dash of olive oil and chilli flakes to taste
Spread the avocado on the toast
Bring a pot of water to a gentle boil, then add a pinch of salt to the water. Meanwhile, crack an egg into a small cup or bowl. With a spoon, begin stirring the boiling water in a large, circular motion, then when the water is swirling, add the egg(s). Cook the egg for about 2 1/2 to 3 minutes
Scoop your egg from the pan and add to your toast

If poaching an egg is a problem for you, a lightly fried egg will work just as well
