
1 cup of Cooked Quinoa
2 tbsps of Boiled Black beans
2 tbsps of Diced Avocado
1 cup of Finely chopped Green Onions
2 tbsps of Chopped Fresh Cilantro / Coriander
1/2 tsp of Red chili flakes
2 tsp of Olive Oil
2 tsp of Lime Juice
2 tsp of Cumin powder

1. Whisk olive oil, lime juice, red chili flakes and salt together in a salad bowl

2. Combine quinoa, black beans, avocado and green onions in the bowl

3. Pour dressing over quinoa mixture and toss to coat

4. Mix in Cilantro lightly at the end

5. Add ground black pepper to taste, mix well and serve immediately. Can be served along side a piece of fish, on its own or with a green salad.
