Try this Sesame Green and Roasted Beetroot recipe for a nutritious and delicious light lunch.
1. Preheat the oven to 400f/200c. Remove the greens from the beets and set aside. Chop the beetroot and toss in one tablespoon of sesame oil and lay them flat on a sheet of foil in the oven. Roast for 25-30 minutes, turning twice, until the beets become tender (but not mushy).
2. Chop the greens and add to the beetroot. Add one tablespoon of sesame oil to a pan over a medium heat. Add the leeks and saute for two minutes. Add the ginger, garlic and saute for an additional minute.
3. Add the greens as well as the soy sauce and cook for 15-20 minutes, until tender.
4. Add any salt and pepper if desired. Serve and enjoy!
