Homemade Tomato Soup

Yields1 Serving
 2 tbs olive oil
 1 medium chopped onion
 1 tbs tomato paste
 2 cloves of minced garlic
 1 vegetable bouillon cube
 2 tsp balsamic vinegar
 1 15ozs can of diced tomatoes
 1/2 tsp. dried thyme

1. Heat a medium sized saucepan with a little oil in it. Add in the onion and sauté for 5 mins until they are brown and translucent. Add in the garlic and the tomato paste, stirring for 1 minute.

2. Stir in the vegetable bouillon cube, the diced tomatoes and the thyme, balsamic vinegar and 4 cups of water. Cover the pan and bring the mixture to the boil. Reduce the heat to a medium low temperature and then simmer uncovered for around 15 minutes.

3. Take off the heat and blend the soup using a food processor or a blender until it’s a smooth consistency. Season with salt and pepper and then serve.
