Avocado Chutney

Here is the most common Indian Style Avocado Recipe called Avocado Chutney. It is a fusion of Guacamole.

Yields1 Serving
 1 Scooped Avocado
 1/2 cup of Grated Coconut (Optional)
 2 Shallots
 2 Green Chillies
 1/2 inch size piece of Ginger
 A pinch of Crushed Rock salt
 1/2 tsp of Lime Juice
 1 tsp of extra virgin olive oil
 1/4 tsp of Cumin seeds
 1/4 tsp of Mustard seeds
 A few Curry leaves
 1 Whole Red Chilli

1. Cut avocado into two sections and scoop out the avocado flesh after removing the seed.

2. Grind avocado flesh, shallots, green chillies, ginger and rock salt together into a smooth paste, adding a little bit of water.

3. Then season it in oil using cumin, mustard seeds, red chili and curry leaves.

4. Add lime juice and mix well.

Note: Grated coconut if added gives a course texture to the chutney and a rich flavor.
