1. Preheat the oven to 350f/175c degrees. Line a baking sheet with some parchment paper.
2. Into a small bowl combine the flax meal, chia seeds and the warm water, whisking well before setting aside.
3. Into the food processor combine the almonds and the quinoa together, processing for 1 minute until it forms a fine meal. Add in some salt and baking soda and process until blended.
4. Into a small saucepan heat the coconut oil and the almond butter together until they are thoroughly melted, whisk occasionally. Add in the raw honey and the apple sauce and whisk until heated through. Remove from off the heat and then stir in the flax/chia egg and vanilla.
5. Place the warm almond butter mixture into the food processor and process it until a dough has formed.
6. Add the chocolate chips into the food processor and process until the chocolate has melted, scraping down the sides as required.
7. Roll the dough into small balls and then flatten using your fingers. This can also be done using a fork.
8. Place in the oven to bake for 12-15 minutes then leave in the pan to cool for 5 minutes before transferring to a wire rack.
