
1 avocado
1 cucumber
1/4 cup of basil leaves
1 garlic clove
1 tablespoon of nutritional yeast
2 teaspoons of lime juice
Smoked or sweet paprika, for garnishing
1/4 teaspoon of sea salt
Black pepper, to season

1. Blend all of the above ingredients except for the cucumber and the paprika into a blender or a food processor.

2. Use a potato peeler to cut the cucumber into long thin strips. (or mandoline if you have one)

3. Take a cucumber strip and spread the avocado mixture onto it so that it covers the entire length. Roll up the cucumber and then sprinkle with a little paprika to season. Serve and enjoy!
