Middle Eastern style tasty chicken dish

2 organic chicken breasts
1 cos lettuce sliced into strips
12 large green olives
A handful of toasted pine nuts
4 tbsp natural yogurt
1 Lemon
2 cloves of minced garlic
1 tsp ground cumin
1 tsp melted coconut oil
2 tsp Olive oil

Rub the chicken in the melted coconut oil with garlic and cumin .

Heat a griddle pan until hot then cook the chicken on medium heat turning frequently until cooked thoroughly

Zest the lemon and juice it then mix with the yogurt and olive oil.

Slice the lemon thinly and cook it next to the chicken a minute either side.

Place the strips of cos lettuce into two bowls

Slice the chicken into strips and scatter over the lettuce and chop the olives into halves and place with the chicken.

Pour the yogurt lemon dressing over the chicken and scatter the roasted lemon slices and toasted pine nuts on top.
