Grilled Fish with Citrus Herb Crust

Yields1 Serving
 A swordfish fillet
 1/4 cup of herbs
 Sea salt
 Black pepper
 Zest of half a lemon
 Zest of half an orange
 2 tbsps olive oil

1. Preheat the BBQ grill onto a medium to low heat setting.

2. Mince the herbs by hand using a mortar and pestle. Pat the fish using paper towels until dry and season both sides with sea salt and black pepper.

3. Onto a large plate mix the chopped fresh herbs, orange zest, lemon, olive oil with sea salt and black pepper.

4. Coat both sides of the fish generously in the herb mixture and marinate for 10 minutes. Placing the fish over the medium-low side of the BBQ grill, cover and cook for around 4 minutes. Flip the fish and then cover and cook for 4 minutes more until the fish flakes when it is poked using a fork. Before serving, squeeze some lemon or orange juice onto the top of the fish.
