
1 small diced onion
1 diced bell pepper
3 diced roma tomatoes
1 diced and deseeded jalapeno
2 minced garlic cloves
1 lb of pastured, organic chicken mince
1 tbsp paprika
1 tbsp cumin powder
1 tbsp dried oregano
¼ tsp chili powder (to taste)
¼ cup finely chopped cilantro (for garnish)
Coconut oil
Salt and pepper to taste
Lettuce leaves to serve

1. Take 1 tsp of coconut oil and saute the onions until they turn translucent.

2. Add the chicken mince and sauté until it’s cooked. Use a spatula to stir, ensuring it does not clump together. Any excess water should be poured out during the cooking process.

3. When the mince is cooked, add the bell pepper, tomatoes, jalapenos, minced garlic, cumin powder, oregano, paprika, chili powder and salt and pepper.

4. Cook the tomatoes until they are soft.

5. Garnish the dish with coriander/cilantro and serve in lettuce wraps or by itself.
