Quinoa Salad with Apples, Cranberries and Goats Cheese

 3 cups of cooked quinoa
 1 cup of chopped walnuts
 1/2 cup of dried cranberries
 2 peeled apples
 2/3 cup goats cheese
 6 spring onions
 2 tbsps fresh lemon juice
 1/3 cup extra virgin olive oil
 Black pepper
 Sea salt

1. Use a small skillet to toast walnuts over a high heat, until browned but not burnt, stirring often. Remove from the heat and allow to cool. Add the olive oil, 1/3 cup of toasted walnuts and the lemon juice into a food processor. Pulse until smooth and then season with salt and pepper.

2. Into a large bowl, combine the apples, quinoa, goats cheese, cranberries, green onions and the remaining walnuts. Pour the dressing over the top and then stir well. Season with salt and pepper to taste. Serve and enjoy!
