Penne pasta is available in lots of varieties including legumes or whole wheat and this gives a good choice to make the dish more wholesome.
Also other vegetables can be added depending on what you have available

120gFresh spinach (or four pieces of frozen)
1medium onion chopped
4Cloves of garlicminced
1Medium red pepper de seededchopped
2courgetteschopped fienly
120gCheese of your choice (i usually go for feta)
1tspDried oregano or mixed herbs
2tspOlive Oil
Salt & pepper to tast
Pine nuts to garnish

Heat the oil in a large frying pan and fry the chopped onion gently

Add the mushrooms spinach pepper and courgette and cook gently for 2 minutes

Add the chopped garlic ,tomato’s and tomato purée
4
Add the herbs and seasoning and reduce to a simmer with a lid on the pan for 15 mins or untill the sauce is cooked. If the sauce is to thick add a small amount of water.

Put the cooked penne into a serving bowl and pour the sauce over and toss everything together

Sprinkle the grated cheese on top and cook under the grill for 2 mins or until the cheese is melted.
