Vegetable Penne Pasta

Penne pasta is available in lots of varieties including legumes or whole wheat and this gives a good choice to make the dish more wholesome.
Also other vegetables can be added depending on what you have available

 250 g Penne pasta legumes or whole wheat and this gives a good choice to make the dish more wholesome
 250 g Mushroomschoppes
 120 g Fresh spinach (or four pieces of frozen)
 1 medium onion chopped
 4 Cloves of garlicminced
 1 Medium red pepper de seededchopped
 2 courgetteschopped fienly
 120 g Cheese of your choice (i usually go for feta)
 1 tsp Dried oregano or mixed herbs
 2 tsp Olive Oil
 Salt & pepper to tast
 Pine nuts to garnish

Heat the oil in a large frying pan and fry the chopped onion gently

Add the mushrooms spinach pepper and courgette and cook gently for 2 minutes

Add the chopped garlic ,tomato’s and tomato purée

Add the herbs and seasoning and reduce to a simmer with a lid on the pan for 15 mins or untill the sauce is cooked. If the sauce is to thick add a small amount of water.

Put the cooked penne into a serving bowl and pour the sauce over and toss everything together

Sprinkle the grated cheese on top and cook under the grill for 2 mins or until the cheese is melted.

Top with toasted pine nuts and serve.
