Prawn soup with spinach

- OliveOil
- Garlic (chopped)
- 1 Onion
- 1 Red peppers
- 150g Muchrooms
- 150 Spinach
- 1 Can chopped tomatoes
- 150 Prawns (wild caught, not farmed)
This soup can be made without the prawns if preferred
Heat the oil with minced garlic
Add the onion, red pepper and mushrooms and fry lightly.
Add the chopped tomatoes and reduce heat, cook slowly for 10min, stirring from time to time
Add the prawns and cook for 3-4 minutes
Add the spinach just before serving
If not want to have prawns, cook on low heat for 15 minutes
