Fish is an important part of diet for its protein value and omega fatty acid content – especially for diabetics. Green sauce adds a tangy note to it and makes a delicious meal when served hot with vegetable salad!
1. Clean and wash the fish.
2. Prepare the mint chutney or green sauce by grinding mint leaves, green chilies, ginger, garlic and crushed rock salt together to a fine paste.
3. Add lime juice, turmeric powder and vinegar to the mint paste and rub the mixture on both sides of the fish, marinating for 30 minutes in the refrigerator.
4. Place the fish in an oven proof dish, pour olive oil over it and cover it.
5. Bake the mint fish until cooked, this will vary depending on type of fish used, do not overcook the fish. Serve hot!
