This delicious Black Bean Quinoa recipe is vegan friendly and makes for a healthy dinner.
15 oz x 2 cans of Black Beans, rinsed
1 cup White Quinoa
4 cups Vegetable Broth
1 cup Water
28 oz can of Yellow Sweetcorn
15 oz can of Diced Tomatoes
15 oz can of Tomato Sauce
2 tbsp Fresh Cilantro, chopped
1 tbsp Minced Garlic
1 Poblano Pepper, chopped
1 Green Pepper, chopped
½ Medium Yellow Onion, chopped
2 Cinnamon Sticks
3 tbsp Chili Powder
1 tsp Cumin Powder
1 tsp Onion Powder
1 tsp Paprika
½ tsp Ground Pepper
½ tsp Sea Salt

Place all ingredients in a stock pot or dutch oven.

Turn heat to medium/high and bring to a rolling boil. Then, cover and let simmer on low for 20-30 minutes or until quinoa is cooked.
