4Wild organic salmonFillets
3Minced garlicCloves
3tbspFresh ParsleyChopped

2Lemon1 for juice, 1 for slices to garnish
¼cupButterMelted

Heat oven to 200 degrees C

Take a sheet of cooking foil big enough to wrap all salmon fillets

Place all 4 of the salmon fillets on the foil leaving enough to make an envelope around the fish

Rub salmon with the minced garlic and parsley

In a bowl, mix the juice from 1 lemon and melted butter and pour over the salmon fillets

Season with salt and pepper

Wrap the foil loosely round the salmon and place in the centre of heated oven for 15 mins

Open the foil and baste the salmon then cook a further few minutes until browned to taste

To serve garnish with lemon slice

Serve with boiled or roast new potatoes and pan fried asparagus (optional)
