1 Red peppers
150g Mushrooms
150g Spinach
1 jar chopped tomatoes
150g Prawns (wild caught, not farmed)

1. Heat the oil with minced garlic.

2. Add the onion, red pepper and mushrooms and fry lightly.

3. Add the chopped tomatoes and reduce heat, cook slowly for 10 minutes, stirring from time to time.

4. Add the prawns and cook for 3-4 minutes.

5. Add the spinach just before serving.
