Heat a tablespoon of coconut oil in a pan and saute the spinach gently, adding in the seasoning.
Add Really Healthy Pasta of your choice into a large saucepan of boiling water. Simmer gently until the pasta is cooked. Drain and set aside.
Into a separate pan, swirl a small amount of vinegar into simmering water. Crack the eggs into a ramekin or cup and create a small whirlpool in the water into which to help the egg white wrap around the yolk. Tip the egg into the water, white first. Leave the egg to cook for 3 minutes. Remove with the slotted spoon and then drain onto kitchen paper.
Put the pasta into a bowl and top with spinach and the poached egg.
