Drain the water and place the cauliflower on a towel and let cool for 10 minutes and then dry completely before proceeding.

In a food processor combine the cauliflower, almond milk, 3 tablespoons olive oil, rosemary, thyme, the roasted garlic cloves which should be roasted by now, ¾ - 1 teaspoon salt and a pinch of black pepper.

Blend and puree for 2-3 minutes or until the mashed cauliflower is completely smooth. Be sure to scrape down the sides of the bowl every 30-45 seconds to ensure even pureeing.

Serve mashed cauliflower with a few sprigs of rosemary or thyme and enjoy.

Luke warm /cold when it gets to the table! Needs to be creamed immediately while warm. Try using a dollop of bio natural yogurt in place of commercial almond milk, which tends to have a lot of additives.
We really enjoyed this recipe…so tasty and easy to make. I added a whole bulb of roasted garlic because we love it.
