This is a delicious dish either on its own or as a simple starter. You might want to replace the feta cheese with goats cheese.
50g/20z of black Kalamata Olives
3 diced medium tomatoes, diced into 2cm cubes
1 peeled cucumber, diced into 2cm cubes
1 de-seeded and diced red pepper
1 finely sliced red onion
100ml/3 fl. oz of extra virgin olive oil
150g/5oz diced feta cheese/goats cheese
1 small, firm cos lettuce, chopped into rough cubes lengthways
A generous sprig of oregano (or 2 tsp of dried oregano)
50ml/3 tbsp of red wine vinegar

Take all of the above ingredients and mix in a bowl. Enjoy!
